Steamed Lobster with Minced Garlic and Vermicelli Noodles

STEAMED LOBSTER WITH MINCED GARLIC AND VERMICELLI NOODLES
Ingredients - 4 Servings
1 whole lobster, 1 ½ lb to 2 lb, deconstructed (instructions below). Keep the head for plating. Or 3 lobster tails in halves.
70 to 80g of glass noodles. Mung bean glass noodles are preferred.
2 Tbsp of julienned ginger
2 Tbsp of finely chopped scallions.
Vegetable oil
Garlic Sauce Instruction
10 cloves of minced or pureed garlic
4 Tbsp of vegetable oil
1/4 tsp sugar
1/3 tsp salt
1/2 Tbsp oyster sauce
1/2 Tbsp soy sauce
Saute garlic in oil over medium-low heat for 3 minutes until fragrant. Turn off the heat. Add sugar, salt, oyster sauce, and soy sauce, and mix well.
Soak Noodles
Soak the glass noodles in room-temperature water for 10 to 20 minutes, until soft. Drain and set aside.
Deconstruct The Lobster
Insert the knife between the tail and the head. Cut along the bottom of the head shell from the back to the front on both sides.
Twist and pull the tail out. Cut off the walking legs and cut the legs in half. Trim off the little claws and discard them.
One hand holds the head shell, the other hand has the bottom part of the head. Pull and separate them.
Remove the gills and other hard parts. Cut the edible meat in half or into four pieces.
Remove the big claws and the knuckles. You can cut each section into 3 to 4 pieces or keep them whole if easier.
Trim off the swimming legs on the bottom and the pointy parts on each side. Cut the tail vertically into half. Keep or remove the tip of the tail. Remove the soft content from the lobster head. Rinse cut lobsters, including head: drain and pat dry.

Steam Lobster
Make small knots of the noodles and place them on the plate. Add half of the garlic sauce.
Bring a pot of water to a boil, 5 to 7 cups. Place the lobster chunks on a plate. If you have a large steamer, steam everything at once, including the head. If you need to steam the head separately, go to step 4 below. You can loosely pile them. Add the remaining half of the garlic sauce on the lobsters. Place the plate in a steamer and steam the lobster for 12 to 15 minutes, depending on the size of the chunks.
Transfer everything to a larger serving plate. Noodles on the bottom and lobsters nicely laid out.
Steam the head on the same plate in the steamer for 5 minutes. Add julienned ginger and scallions to the lobsters. Then add the head to the plate.
Heat 2 Tbsp of vegetable oil in a small pan. When smoking, pour it over the ginger and scallions. Serve and enjoy!
