Celery Salad

In China, there are two types of celery commonly used in cooking. The first is Chinese celery, which has thin stems and leaves and is used in stir-fries, dumplings, spring rolls, and other dishes. The second is Western celery, which has thick stems and leaves that are usually chopped off. 

My family has always used Western celery in our salad dishes. Let me show you a simple celery salad recipe.



  • 4 large celery stems

  • 2 cloves of garlic, minced

  • 2 dried red chili peppers, coarsely cut. Or 1/2 tsp pepper flakes

  • Light soy sauce

  • High smoke point vegetable oil

  • Salt


  1. Rinse and dry the celery stems. Snap a small part from both ends to remove the strings

2. Cut the celery at a 45-degree angle into 1/4-inch pieces.

3. Bring 5 cups of water to a boil. Blanch the celery for 30 seconds with 1/4 tsp salt and 2 tsp vegetable oil to retain its vibrant green color.

4. Drain the celery and plate. Add 1/3 tsp salt and 1 Tbsp of soy sauce to taste.

5. Add chili peppers and minced garlic.

6. Heat 1 1/2 Tbsp of oil. When the oil starts to smoke, pour hot oil on the peppers and garlic to bring out the flavors.

7. Toss well and serve.
